Water Pastry Line

Su Böreği Line consists of 4 parts.

  1. DOUGH LETTER UNIT
  2. BOILING UNIT
  3. SHOCKING UNIT
  4. CHILLER

As the dough rolling unit, we developed the baklava dough rolling machine a little further and made it possible to roll out dough for su pastry. Our purposes in using this machine are;

  1. To ensure that the boiling water does not become too dirty by using less starch.
  2. To make dough faster.
  3. The dough rolling unit consists of fewer parts, so the possibility of malfunction will be less.

blanching unit

  1. It is manufactured in lengths of 2.5 - 4 and 6 meters according to the customer's capacity.
  2. The scalding unit works with 320 to 600 liters of hot water.
  3. Water heating is done with a specially designed atmospheric burner group powered by natural gas.
  4. The modular tape used on it is the tape manufactured in the market. (Without being dependent on the manufacturer, manufacturing can be continued by easily procuring it from the market in the future.)
  5. The water level is controlled electronically and cannot be operated without water.
  6. Our most important feature is that when the machine is stopped when the production is completed, the parts on the machine that need to be cooled cool down and the machine itself stops automatically.

Shocking Unit

  1. It is 2.5 meters long.
  2. It contains 250 Liters of water.
  3. There is a pump that constantly circulates the water.
  4. 2 filters clean the water during circulation.
  5. 1 heat exchanger provides cooling of the circulating water (In this way, the dough coming from boiling at 80 - 83 degrees is cooled by sudden shock in 10 degrees of water.)
  6. Boiled and cooled dough is portioned into desired sizes by means of knives mounted on the modular band.

Chiller

  1. It is our own production. In this way, we provide the customer with all machine-related services.
  2. 8hp compressor is used.
  3. It produces an average of 420 Liters of cold water.
